摘要
甲壳素是一种资源丰富、性能优良的天然高分子化合物。本文主要介绍甲壳素脱乙酰化及其动力学研究进展，各种脱乙酰化反应的比较，并指出了脱乙酰化动力学研究对于壳聚糖的制备及工业中应用的重要性。
Chintin is a kind of multi-functional polymer, which is rich in natural resources. the development of deacetylation and kinetics of chitin is mainly introduced and various methods of deacetylation are also compared. The importance of the research in kinetics deacetylation is emphasized.
