摘要
对以糙米为原料制作面包的技术进行了研究,通过正交试验确定了营养糙米面包的制作工艺参数和配方,开发出新型营养保健型糙米食品。
This research is on the technology of bread processing with unpolished-rice as main material, confirming the technological parameters、 formula in manufacturing a kind of nutrient unpolished-rice bread in terms of orthoginal test .Thus a new types of unpolished-rice stuff both nutrient and hygienic are available.
