摘要
采集华南沿海主要贝类养殖区太平洋牡蛎(Crassostrea gigas)、翡翠贻贝(Perna viridis)、菲律宾蛤仔(Ruditapes philippinarum)和文蛤(Meretrix meretrix)样品,分析讨论了重金属元素镉(Cd)、铜(Cu)、铅(Pb)、锌(Zn)、铬(Cr)、镍(Ni)、汞(Hg)和砷(As)的含量特征,并采用点估计方法对贝类产品中Cd、Cr、Pb、Ni、Hg和As的膳食暴露量进行评估。结果表明,不同贝类重金属元素含量存在明显差异,而且重金属含量存在季节差异。对照GB2762—2012《食品安全国家标准食品中污染物限量》,此次调查贝类产品中Cd、Cr、Pb和Hg的合格率均为100%。风险评估结果显示,华南沿海主要贝类养殖区4种贝类重金属的膳食暴露量均低于联合国粮农组织和世界卫生组织食品添加剂联合专家委员会(JECFA)推荐值,对人体健康产生危害的风险小。
According to the survey data on Crassostrea gigas, Perna meretrix collected from the coast along South China Sea, the content viridis, Ruditapes philippinarum, and Meretrix of cadmium (Cd), copper (Cu), lead (Pb), zinc (Zn), chromium (Cr), nickel (Ni), mercury (Hg) and arsenic (As) in the samples were analyzed, and the dietary exposure risk caused by these heavy metals was evaluated using the method of point estimation. The results showed that the heavy metal contents varied in different species of shellfish. And the contents of Cd, Cr, Pb, Ni, Hg and As were lower than the limits issued by "National Food Safety Standard - The Limits of Pollutant in Food". The risk assessment results showed that the dietary exposure risk of heavy metals in these shellfishes were under the control ranges according to the recommended values of the Joint FAO/WHO Expert Committee on Food Additives (JECFA).
