摘要
对北京7家超市的鲜蛋销售情况进行调查,统计不同种类鲜蛋的平均在销时间和平均每枚蛋价格。结果显示,除宝宝蛋在销时间较短(9.6 d)外,其余各类鲜蛋的平均在销时间为13~16 d,保质期和包装方式对鲜蛋在销时间影响不大,知名品牌的鲜蛋平均在销时间比非知名品牌多1 d。知名品牌鲜蛋的价格是非知名品牌的112%,宝宝蛋最贵(平均2.22元/枚),柴鸡蛋较便宜(平均1.06元/枚),纸蛋托包装的鲜蛋最贵(平均1.98元/枚)。检测所调查鲜蛋的哈夫单位和蛋黄指数并分级,在销时间32 d以内的鲜蛋为特级,32 d后等级下降,52 d后基本散黄或腐败变质。各品种鸡蛋在相同贮藏时间的新鲜度差异不大,鲜鸡蛋较好,柴鸡蛋较差。
Seven supermarkets have been investigated for selling fresh eggs in Beijing. Average selling time of different types of eggs and average price of each chop eggs have been counted. As a result, in addition to the shorter sale time of baby eggs (9.6 days), the average sale time of other types of eggs is 13 to 16 days. The shelf life and packaging have little effect on sale time of eggs. The average sales time of well-known brand eggs is one more day than non-known brand eggs. The price of well-known egg brands is 112% more expensive than non-known brands. The price of baby eggs is the most expensive (2.22 yuan each chop) and the price of little eggs is the cheapest (1.06 yuan each chop) . Eggs in paper packaging are the most expensive (1.98 yuan each chop) . The Haugh units and yolk index of investigated eggs are detected and then classified. As a result, graded the sale time in less than 32 days for the super fresh eggs and downgrading after 32 days. Most of eggs are egg yolk broken or spoilage after 52 days. All varieties of eggs have little difference of freshness on the same storage time, fresh eggs better and little eggs poor.
