摘要
以碎粳米为原料,采用碱提酸沉法提取碎粳米中蛋白质,研究碎粳米蛋白质提取用于制作大米可食性膜的最佳工艺条件。结果表明,在NaOH浓度0.10 mol/L,料液比1∶10,温度20℃,提取5 h的条件下,碎粳米蛋白质提取率可达77.30%。
In this study, broken round shaped rice is taken as the raw material, traditional alkali extraction and acid precipitation method is applied for rice protein extraction, and the rice protein extraction parameters are optimized. The optimal extraction conditions are obtained as following: NaOH concentration of 0.10 mol/L, ratio of solid to liquid of 1∶10, extraction temperature of 20 ℃, and extraction time of 5 h. Under these conditions, the extraction rate of rice protein from broken round shaped rice is 77.30%.
