In accordance with the active functions of essential oil in Perilla frutescens（L.）Britt in the following fields：food processing,health ＆amp; medicine and ecological agriculture,summarize some spe-cific application examples of essential oil in Perilla frutescens （L.）Britt in various fields;elaborate the material base of oil exerting biological activity and relevant mechanism;introduce the measures to enhance the stability of essential oil in Perilla frutescens（L.）Britt.
