摘要
鱼鳞是水产品加工中的废弃资源,它也是一种优质的胶原蛋白来源。总结了鱼胶原蛋白的特性,鱼鳞明胶和鱼鳞胶原蛋白多肽的制备工艺,以及鱼鳞硬蛋白和磷酸氢钙的制造方法。提出了工业化开发利用鱼鳞资源的完整工艺路线和车间设备,并对鱼鳞胶原蛋白的应用前景进行了讨论。
Fish scales are generally considered as discarded wastes in aquatic products processing industry. However, it can also be used as an alternative sources of quality collagen. The characteristics of fish collagen, manufacturing processes of fish gelatin, polypeptide, fish scale scleroprotein and dicalcium phosphate were summarized in this article. An integral manufacturing ＆ processing methodology for the industrial utilisation of fish scale resources and relevant workshop and equipments is put forward, and the application prospect of fish scale collagen was discussed.
