摘要
采用热水自溶法水解草鱼内脏,从中分离出水解产物,然后将其干燥制作成饲用多肽粉.研究了水解工艺条件对草鱼内脏水解的影响,测定了水解液和干燥后的多肽粉的抗氧化活性.结果表明,当自溶温度为60℃,自溶时间为75min,每100g内脏匀浆加水60mL时,草鱼内脏的油脂提取率为70.05%.此时,内脏水解液的自由基清除率高于72%.水解液经过干燥后,其理化组成符合国家一级饲用鱼粉标准.热风干燥的饲用多肽粉的自由基清除率高于喷雾干燥多肽粉.
The grass carp guts were hydrolized by hot water autolysis method, and then the hydrolysates were separated and dried to gain the forage polypeptide. Effeets of the hydrolysis conditions on hydrolyzing of the grass carp guts were investigated, and the antioxidant activity of the hydrolizing solution and the dried hydrolysate powder was determined. The results showed that the oil extraction rate of the grass carp guts was high up to 70.05% in the conditions of outolysis temperature of 60 ℃, outolysis time of 75 min and the additive quantity of water of 60 mL in 100 g gut homogenates. Right now, the radical clearance rati- o of the gut hydrolysis solutions was above 72%. After drying, the compositions of the fodder powder from hydrolysis solutions were accord with China national standard of forage fish meal one. The radical clearance ratio of the hot air drying polypeptide powder was high than that of the spray drying polypeptide powder.
