一株能降解牛奶中过敏原αs1-酪蛋白的蛋白酶产生菌的筛选、鉴定及免疫学研究

摘要 从牛奶场附近土壤中筛选得到1株能降解牛奶过敏原蛋白(αs1-酪蛋白)的菌株Exiguobacterium BBE201110,能产分子量约为55 kDa的蛋白酶,酶活达到346.48 U/mL,对该酶降解牛奶过敏原(αs1-酪蛋白)效果进行免疫学研究(Western blot)表明,在牛奶中添加4%的酶溶液进行降解20 min,酪蛋白特异性清除显著,过敏原蛋白αs1-酪蛋白浓度明显的降低。本实验筛得降解牛奶过敏原蛋白(αs1-酪蛋白)的菌株并成功纯化出蛋白酶,具有一定的食品工业开发价值及商业应用潜力。 In this study, the Exiguobacterium BBE201110 was isolated from dairy farm soil. One of its protease with the molecular mass of approximately 55 kDa and its activity as high as 346.48 U/mL was confirmed by Western blot to digest allergen protein (alpha s1-casein) in milk specifically. In this case, this study provided a novel way to develop nutritious hypoallergenic milk products which might be used in the field of hypoallergenic foods.
