影响味觉感受的因素

摘要味觉作为食品感官检验的一种重要感觉意识形态，它的作用不容忽视。影响人体味觉感受的因素除却物质本身的性质与结构外，人体状态、居住环境等因素也有较为明显的作用。本文从年龄、病理、情绪心理的作用等方面出发，对影响味觉的因素进行综述。
