微藻油和鱼油中DHA的特性及应用研究进展 被引量:61

摘要 二十二碳六稀酸(DHA)属于ω-3多不饱和脂肪酸,对人类健康有特殊的作用和影响。目前,DHA的主要来源是鱼油和微藻油。在鱼油中DHA以乙酯型式存在,而微藻油中则是以甘油三酯的型式存在。甘油三酯型DHA相对于乙酯型而言,在人体内的代谢吸收率和生物利用率、稳定性、安全性等方面都有很大的优势;同时,鱼油和藻油在气味、EPA及胆固醇含量、重金属汞和持续性有机污染物等问题上也存在差别。在水资源和鱼类资源日趋紧缺的今天,发展可持续稳定生产的富含DHA的藻油将是未来食品行业一个重要的发展趋势。 Docosahexaenoic acid(DHA)belongs to theω-3 polyunsaturated fatty acid family and is beneficial for human health. The main sources of DHA currently include fish oil and microalgal oil. In fish oil, DHA exists in ethyl ester form while in microalgal oil, DHA exists in triglyceride form. DHA in triglyceride form is advantageous compared to its ethyl ester form in terms of efficiency of metabolic absorption in the human body, biological utilization ratio, stability and safety, etc. Moreover, fish oil and microalgal oil are also different in several aspects such as smell, EPA and cholesterol contents, and contamination of heavy metals and persistent organic pollutants. Therefore, the sustainable production and supply of DHA by microalgae will be the future trend in the food industry considering the limited availability of water and fish resources.
