摘要
研究和分析用开孔面积2.3%和4.0%的塑料箱和纸箱包装方式,在0℃条件下,甜玉米从初温27℃压差预冷降至3℃,对冷却时间、半冷却时间、7/8冷却时间和失重率的影响。结果表明:塑料箱包装的甜玉米冷却时间、半冷却时间、7/8冷却时间和失重率分别为195 min和175 min,101min和95min,191min和173min,1.02%和1.18%;纸箱包装的甜玉米冷却时间、半冷却时间、7/8冷却时间和失重率分别为210min和185min,105min和98min,204min和182min,1.22%和1.41%。开孔面积越大,压差预冷速度越快,但失重率也越大;相同开孔面积的塑料箱包装的甜玉米与纸箱相比,压差预冷速度快,失重率要小。
Forced air precooling was used as a rapid cooling method for sweet corns. To investigate the influences of vented area and packa ging method on forced air pre-cooling effects of sweet corns, four different parameters were analyzed during the process of pre cooling with the initial temperature of 27 ℃ to the terminal temperature of 3 ℃, under the condition of 0 ℃ including cooling time, half-cooling time, 7/8 cooling time, weight loss. The results showed that the cooling time, half-cooling time, 7/8 cooling time and weight loss of sweet corns which were packed in plastic container with open area of 2.3% and 4.0% were 195 min and 175 min, 101 min and 95 min, 191 min and 173 min, 1.02% and 1. 18%, respectively. As for the packaging material of cardboard box with the same vented area, the results were 210 rain and 185 min, 105 min and 98 min, 204 min and 182 min, 1.22 % and 1.41%, respectively. Additionally, the results also indicated that the larger the opening area was, the faster the pressure pre cooling would be, but the great weight loss would occur. Compared with the sweet corns packed in cardboard box, the samples packed in plastic container exhibited a faster speed of precooling's pressure and a smaller rate of weight loss.
