分析了油炸用油劣变的现象以及引起油炸用油劣变的因素,并提出了防止或延缓其变质的方法。
In this paper, an analysis is made of the deterioration of oils used in frying and the factors causing the phenomenon, and severalmetheds are proposed to prevent or retard the deterioration.
