摘要
对西兰花耐贮品种和包装材料进行筛选,并找到西兰花贮期品质的变化规律。结果表明,0℃条件下贮藏60d,不同品种西兰花贮期的呼吸强度均呈先下降后上升的趋势,Vc含量呈先上升后下降的趋势;用保鲜袋包装的西兰花贮藏60d,其失重率仅为0.25%,而不加包装的同一品种失重率达57.1%~62.5%,失去食用价值。综合外观、呼吸强度、Vc含量和失重率等因素确定,冠军是较耐贮的品种;PE(0.04mm)保鲜袋和BIGC—K型智能保鲜袋是适宜的贮藏包装材料。
The study is conducted to select broccoli of storage resistance, packaging materials and to find the quality change rule in storage period. Results show that the respiration rate is decreased at first and increased later and Vc content is increased at first and decreased later; in different varieties of broccoli under storage for 60 days; the weight loss 'rate is 0.25% with fresh bags packed and the weight loss rate is 57.1% - 62.5% without fresh bags packed. Guanjun is a variety of more storage resistance; 0.04 mm PE bags and BIGC - K type intelligent plastic bag are suitable as packing materials.
