摘要
论述了谷物淀粉的糊化和回生特性 ,以及与谷物主食方便食品产品质量之间的关系。
The peculiarities of gelatinization and retregradation of cereal starch , as well as the relation between the paculiarities and the quality of the products of staple convenient cereal food were discussed.
