摘要
研究了红甘蓝色素的稳定性。实验证明 :在酸性条件下该色素对阳光、热和部分金属离子有很好的稳定性 ;对食品加工中常用氧化剂和还原剂也比较稳定。
The stability of red vargemmifera pigment was studied .The results show that the stability of red pigment is good to heat, sunlight and part of metal ions under acid conditions, it is stable to usual oxidant and reducetant in food processing.
