摘要 目的探究不同温度对唾液淀粉酶活性的影响,并对实验操作流程进行改进。方法将2011级本科护理和临床学生分为对照组和实验组。结果根据不同的颜色判断酶活性的高低,适宜温度唾液淀粉酶才能发挥其最佳的催化作用;酶的活性在沸水浴(95℃)中并没有受到影响,反而比恒温水浴(37℃)反应的更彻底。结论低温抑制酶活性,但不会破坏酶活性;唾液淀粉酶是耐高温的酶。 Objective To explore the activity of 5 kinds of temperature on salivary amylase. Method 2011 undergraduate nursing and clinical students were divided into control group and experimental group, more than one years' experiments, and compared with the pervious. Result Activity was determined according to different colors. Suitable temperature of salivary amylase could play a catalytic role in the best. Enzyme activity in the boiling water bath (95 ℃ ) was not affected, but in the constant temperature water bath (37 ℃ ) reaction was done incomplete. Conclusion Salivary amylase is a high temperature resistant enzyme. The teaching quality of biochemistry experiment significantly improve.
