摘要
彩色马铃薯品种块茎富含花色苷,是天然色素的潜在来源。本实验采用高效液相色谱-质谱(HPLC-MS)法,分析了云南地方彩色马铃薯品种"剑川红"和新选育紫色品种"师大6号"块茎中所含花色苷的主要类型。结果表明:"剑川红"花色苷主要为天竺葵素类衍生物,"师大6号"的花色苷主要为矮牵牛素和芍药素类衍生物。
Pigmented potato(Solanum tuberosum L.) which contains plentiful anthocyanins is a potential source of natural colorant.In this paper,the main composition of anthocyanins in the red-fleshed landrace of potatoes named Jianchuanhong(JCH),and a newly released purple-fleshed cultivar Shida-6(cv.H 6) in Yunnan province were analyzed by the joint methods of High Performance Liquid Chromatography and Mass Spectrometry(HPLC-MS).The results indicated that the main composition of anthocyanins in landrace JCH was the derivatives of acylated pelargonidin,but in cv.H 6,the main types of anthocyanins were the derivatives of petunidin and peonidin.
