引入石河子地区的苹果品种果实香气成分的GC-MS检测 被引量:2

摘要 【目的】检测引入石河子地区苹果品种的香气成分,筛选出具有较好香气成分的品种。【方法】采用静态顶空气相色谱—质谱联用(GC-MS)技术分析8个苹果品种果实香气成分,并用面积归一法测定各物质的相对百分含量。【结果】所有样品中检测到的挥发物进行统计共有29种香气成分,其中有26种香气都是酯类物质。8个苹果品种果实乙酸己酯的含量相对其他香气成分均较高,夏红、苦开麦、锦红、吉早红的香气种类较多。【结论】苦开麦、锦红、吉早红香气总量相对其他品种较高,且具有浓郁的酯类型的香气成分。 [ Objective] In order to select the cultivars with rich fruit aroma from apples introduced in Shihezi area. [ Method] 8 apple cultivars were used to compare their fruit aroma by a static headspace and gas chromatography mass spectrometry (GC/MS). And the relative percentage of each substance was determined by the area normalization method. [ Result ] The results showed that twentynine kinds of aromatic components were detected, among which, twenty - six kinds of aroma were ester substances. Hexyl acetate relative content was higher than other aroma components in the fruit of 8 apple cuhivars. The aroma was richer in Xiahong, Jinhong, Kermerden and Jizaohong. [ Conclusion] Results indicated that Kermerrien, Jinhong, Jizaohong had higher total aroma content with rich ester type aroma components.
