摘要
红藻胶是红藻类植物经过一系列物理化学处理而得到的一种添加剂,其来源广泛且具有独特的特性和功能。该文主要介绍琼胶和卡拉胶的理化特性以及应用现状,并对以后的研究方向和前景做出展望。
Furcelleran is a kind of additive ,which is obtained from red algae plants through a series of processes.Furcelleran not only has rich source ,but also has the unique characteristics and functions.The physicochemical properties and application status of the agar and carrageenan were reviewed and the prospects for the future research direction of the agar and carrageenan were made in this paper.
