摘要
果蔬预冷可有效抑制果蔬的呼吸作用,延长保鲜周期。在文献检索的基础上,根据果蔬预冷机理,对现有的预冷技术进行了分类,分析了冷水预冷、冰水预冷、冷库预冷、差压预冷以及真空预冷技术的研究与应用现状,结合冷链物流发展特点,对各种预冷技术可能发展方向进行了阐述,展望了预冷技术研究总体发展趋势。
Precooling can effectively inhibit the respiration and extend the preservation period of fruits and vegetables. In this paper, the precooling techniques were classified according to its mechanism based on the related literatures. The research and application status of hydro precooling, ice precooling, forced-air preeooling and vacuum preeooling techniques were summarized and analyzed. Combined with the development characteristics of cold chain logistics, the future research trends for these precooling techniques were presented respectively. Meanwhile, the general research trends of precooling techniques were pointed out.
