摘要
目的了解泰州市高校周边食品摊贩经营现状以及从业人员对食品安全知识的认知水平,为食品摊贩监管提供科学依据。方法采用整群抽样法,从泰州市区6所高校中随机抽取3所,调查其周边所有食品摊贩食品安全认知情况和卫生行为,用SPSS 13.0软件对数据进行χ2检验等统计分析,P<0.05为差异有统计学意义。结果本研究共调查96家食品摊贩和196名从业人员,40.63%配备了洗手设施、设备,46.88%配有存放垃圾或废弃物的暂存容器,54.17%配有防蚊、防蝇、防雨、防晒设施,35.42%有食品原料采购索证、索票资料及采购记录,75.00%食品、食品原料储存不符合国家要求。64.80%的从业人员未接受过食品安全知识培训,食品安全知识评分合格率48.47%,从事的食品类别、年龄、文化程度、食品安全知识受训经历对评分结果有影响(χ2=6.4197、7.3724、10.4680、6.5558,P均<0.05)。结论泰州市应尽快完善规章制度,加大监管力度,加强从业人员食品安全知识培训和大学生宣传教育工作。
Objective To assess the current operating status of food vendors around campuses and to understand the cognitive level on food safety among workers. Methods Based on cluster sampling method, 3 out of 6 college cam- puses were selected for the survey. All food vendors around the campuses were investigated in terms of food safety cognition and hygienic behavior. SPSS 13.0 software was used to analyze the data. Results A total of 96 food yen dots and 196 workers had been investigated, 40.63 % had hand-washing facilities and almost half had garbage cans, 54.17% had preventive facilities for mosquito, fly and water. , 35.42% had cable card, invoice and purchase re cords on food procurement. However, there were 75 % vendors whose food and raw material storage did not meet the national requirement. 64.80 % of workers did not receive any food safety training, therefore their overall cognitive rate was only 48. 47%. Age, education, food safety training of workers as well as their business type were all closely re lated to the final scores （x2=7. 3724, 10. 468, 6. 5558, 6. 4197. P〈0.05） . Conclusions Rules and regulations on food safety should be strengthened and workers need to be trained in order to offer a healthy and safe food service to students in Taizhou.
