摘要
目的了解江苏肉鸡屠宰过程中胴体沙门菌污染情况,为屠宰环节肉鸡胴体沙门菌风险评估提供依据。方法采集不同季节屠宰过程中的肉鸡胴体进行沙门菌定性及定量检验,并对检出的沙门菌进行血清学分型。结果 150份样品中检出沙门菌71份,污染率47.3%,其中夏、秋季(预冷后采样)污染率均为36.0%,冬季(预冷前采样)污染率70.0%,差异有统计学意义(P<0.01)。夏、秋季鸡胴体沙门菌污染量≤1.0MPN/g的占93.0%,所有样品污染量均<2.0MPN/g;冬季沙门菌污染量≤1.0MPN/g的占86.0%,其中1份样品污染量为3.8MPN/g。检出的沙门菌血清型集中在1~3种。结论屠宰厂肉鸡胴体沙门菌污染率与屠宰预冷处理环节有关,以鸡胴体间的交叉污染为主。
Objective To understand the contamination of Salmonella in chicken during the process of slaughter, and to find the main influence factors for Salmonella risk assessment. Methods Whole chicken samples were collected in different seasons for qualitative and quantitative testing and serotype Salmonella strains was discovered. Results The detection rate of Salmonel- la in chicken in spring and autumn was 36G, while in winter was 70% with statistical significance (P〈0.01). In summer and autumn, the contamination level 1.0 MPN/g of whole chicken was 93.0%, all of the samples were 〈2.0 MPN/g; in win- ter, the contamination level 41.0MPN/g of whole chicken was 86.0%, one of the samples was 3.8 MPN/g. The serotype of Salmonella examined focus on 1--3 types. Conclusion The pollution rate of Salmonella in chicken from abattoir had close rela- tionship with the process of slaughter, especially with cross contamination.
