摘要
甘蔗采后于 2℃贮藏 ,随着贮期延长 ,蔗茎的呼吸强度呈上升趋势但没有高峰出现。蔗汁中蔗糖和可溶性总糖含量呈下降趋势 ,还原糖和酒精含量出现不同程度的增加。在贮藏前期 ,蔗汁中酸 /中性蔗糖转化酶活性呈增加趋势 ,其中以酸性转化酶活性增加较为显著。甘蔗采后蔗糖含量下降是转化酶和呼吸作用的共同结果。
Sugarcane was stored at 2℃. During storage, the respiratory rate of cane stem increased, but no respiratory peak was. The sucrose and total polysaccharide content in juice decreased, while the reducing sugar, titrated acidity and ethanol content increased. During the early period of storage, the activity of acid/neutral invertase in juice increased, especially for the acid invertase. The loss of sucrose in post harvested sugarcane was caused by the respiration and conversion.
