Investigation on 18 cases of nitrite food poisoning in a family dinner

摘要 目的对一起家庭聚餐亚硝酸盐食物中毒事件调查分析,为预防措施提供依据。方法采用流行病学调查方法和实验室检测,结合临床表现特点,使用特效解毒药物及时抢救治疗中毒患者情况。结果亚硝酸盐食物中毒患者18例,经及时入院抢救治疗,采用催吐、洗胃、输液、静点注射特效解毒剂美蓝和维生素C、葡萄糖等对症治疗,48h后均痊愈出院,愈后良好,无后遗症。结论误将亚硝酸盐为食盐使用是造成本次食物中毒事件发生的原因。应加强农村居民、学校食堂、食品餐饮行业等重点领域食品安全知识社会宣传教育,加大食品安全监督执法力度,严格执行国家卫生部关于餐饮行业停止使用亚硝酸盐作为食品添加剂的有关规定,对于防止类似食物中毒事件的发生具有重要意义。 Objective To investigate and analyze a nitrite food poisoning in a family dinner, and provide basis for formulating preventive measures. Method Rescue and treat the patients by epidemiological investigation and laboratory testing, combining with clinical features, and using effective antidotes. Results The 18 patients were recovered after 48 hours of treatment, including emetic, gastric lavage, infusion and injection of effective antidote ( methylene blue), vitamin C and glucose. All of them had no sequelae. Conclusions Mistakenly taking nitrite salt as table salt was the reason for this food poisoning. We should strengthen the publicity and education of food safety knowledge in rural residents, school canteen, food catering industry and other key areas, increase the supervision and law enforcement of food safety, and strictly implement the relevant provi- sions of the Ministry of Health on stopping to take nitrite as food additives in catering industry, which had important significance in preventing the occurrence of similar event.
