摘要
目的选用3种市售纯牛奶和2种脱脂奶粉(采用多种奶源材质制备不同的牛奶培养基),按照优选乳酶生质量标准鉴别中酸度测定试验培养基,为乳酶生质量标准提高提供参考。方法分别将蒙牛、伊利、银桥3种纯牛奶,完达山和银桥2种脱脂奶粉制备牛奶培养基,比较采用不同牛奶培养基进行酸度测定试验结果。结果蒙牛、伊利和银桥纯奶制备的牛奶培养基分别对不同厂家和批次的乳酶生检测合格率分别为61.54%(16/26)、65.38%(17/26)和57.69%(15/26);采用完达山和伊利脱脂奶粉制备的牛奶培养基对乳酶生检测合格率分别为100%(26/26)和96.15%(25/26)。结论完达山脱脂奶粉制备的牛奶培养基酸度测定值最高,合格率最好;其次为伊利脱脂奶粉,3种纯奶酸度测定值较低,合格率较差,采用不同的奶源材质制备的不同培养基直接影响乳酶生酸度的测定。
Objective To identify the mediums in acidity tests, which were made from three kinds of pure milk and two kinds of defatted milk powder according to. optimizing lactasinum biofermin quality standard. That would provide reference for improving lactasin quality standard. Method Compared the results of acidity tests from different milk mediums that were made from different brands including Mengniu, Yili, Yinqiao pure milks and Wandashan, Yili defated milk powder. Results The acceptance rate of acidity tests that were made from Mengniu, Yili, Yinqiao pure milks were 61.54% ( 16/26), 65.38% (17/26) and 57.69% ( 15/ 26), respectively. The acceptance rate that were made from Wandashan, Yili defated milk powder were 100% (26/26) and 96. 15% (25/26) respectively. Conclusions The measurement of acidity from milk medium that were made from Wandashan defated milk powder was the highest and qualified rate was best in Lactic qualification test. The next was Yili defated milk powder, and the three kinds of pure milks were the lowest and worst. Different mediums, that were made from different brands pure milk or milk powder affect directly results of acidity tests in lactic qualification test.
