主要研究食品品质损失动力学中 Arrhenius模型与 Z值模型的关系 ,得出了活化能 Ea与 z值相互转化的实用关系式 ,对于反应速率常数
WT5”BZ]The Arrhenius model and z value model have been used independently to describe temperature dependence of reaction rates in food materials.The relationship of two models was studied in detail.The paper provides a way that approximately converts z value and activation energy each other and extends application area of z value model.
