摘要
通过对麦芽理化指标和抗氧化性相关指标的研究,发现麦芽品质与抗氧化指标具有一定的相关性,并且几种抗氧化指标间也具有一定相关性,可为评价麦芽品质及进一步评估麦芽的内源性抗氧化力提供参考。
This paper studied on the relativity between physical and chemical indicators and antioxidant activity. The results showed that there was a certain correlation between malt physical and chemical indicators and antioxidant activity, which provided references for evaluating malt quality and antioxidation index.
