GB 19295-2011标准抽样方案及评价标准合理性分析

摘要 目的:从抽样方案和评价标准分析食品安全国家标准《速冻面米制品》(GB 19295-2011)的合理性,回应社会公众对该标准修订合理性的质疑。方法:假设一批产品总数为N个,其中随机分布有K个含有金黄色葡萄球菌的产品,根据GB 19295-2003和GB 19295-2011标准所提供的抽样方案,计算并比较其抽中不同数量阳性个体的概率。结果:GB 19295-2011标准抽样方案抽中阳性产品的概率更高,但依据该标准,抽中阳性产品并不一定意味着产品不合格。结论:GB 19295-2011标准抽样方案的样品代表性高,抽中不合格产品的可能性高,依据样品检测合格率进行推论也更为合理,由样品检测结果推论总体更可靠。 Objective : To analyze the rationality of national food safety standards "frozen pastry products" ( GB 19295 -2011 ), and reply the public questioning which standard is better. Methods: Supposed there were N prod- ucts, with K of them polluted by Staphylococcus aureus. According to the sampling plan of GB 19295 -2003 and GB 19295 -2011, the probability of getting the polluted products was calculated and compared. Results: The probabili- ty of getting the polluted products using the sampling plan of GB 19295 - 2011 was higher than the original one. But the polluted products were not all unqualified. Conclusion: Compared with GB 19295 -2003, the sample with the sampling plan of GB 19295 -2011 is more representative, the probability of getting the polluted products is higher, the inference is more reasonable, and the conclusion is more credible.
