摘要
采用微波辅助法,从薯莨块茎中提取色素,以蒸馏水作为提取溶剂,在单因素试验基础上,通过正交试验优化提取工艺条件,分别考察了微波功率、微波时间以及料液比对薯莨色素提取率的影响。结果表明,以蒸馏水为提取剂,微波功率250 W、时间6 min、料液比1:25时,薯莨色素提取率可达85.7%。
