摘要
冠突散囊菌是茯砖茶在特定的温湿度条件下,通过"发花"工艺生长的自然益生菌体。文章主要综述了冠突散囊菌的特性及其改善茶叶的品质、抗氧化、抑菌、提高酶活性、调节维持肠道菌群平衡的营养作用。
Eurotium cristatum are stablely natural probiotics in Fu-brick tea. It grows yellow cleitothcium durning the fermentation process, which is called ＂golden flower＂, on special temperature and humidity conditions. Thispaper summarized the effects of Eurotium cristatum on the quality of Fu-brick tea, antioxidant, antibacterial, the activity and the balance of intestinal flora.
