摘要
本文对南酸枣 (Choerospondiasaxillaris)鲜果的常规营养成分和化学成分进行了测定。结果表明 ,南酸枣果实含有丰富的营养素 ,鲜果皮肉中 1 8种氨基酸总量达 2 6.2 3~ 38.54mg/1 0 0g ,蛋白质为 0 .92 %~ 1 .4 8% ;有机酸含量高达 5.2 2 %~ 8.1 3% ,色谱分析显示含有 2 1种有机酸 ,其中以柠檬酸、酒石酸、苹果酸和葡萄糖酸等为主要成分 ;鲜果可食部分还含有丰富的Ca、Fe、Zn、Cu、P等营养矿物元素和一些生物活性物质等 ;种仁中含有丰富的油脂、蛋白质和南酸枣仁皂苷等有较高利用价值的成分。
The nutritive,chemical components of Choerospondiax axillaris fruits were determined in this article.The experimental result shows that there are aboundant nutritions in the fresh fruits,there are 18 kinds of aminoacids concluding the 8 kinds of necessary aminoacids to body,its whole volume adds up to 26.23~38.5mg/100g,the proteins is 0.92~1.48%,the organic acid is very high to 5.22~8.13%,and its components are aboundant,this is very rare in general fruits.There are also biochemically active materials;which have great physiological actions such as saponins and flavones of chieros-pondias axillan's.This study provides scientific basis for the exploitation and use of choerospondias axillaris fruits.
