摘要
介绍了植物抗氧化剂的类型及其主要作用机理,并重点介绍了多酚类、多糖类、维生素、番茄红素等类型,综述了目前植物抗氧化剂的应用、存在的主要问题及发展前景。
The types and mechanism of the major natural antioxidant are described, the polyphenols, polysaccharides,vitamins, natural lycopeneare are emphatically introduced, and the existing applications of natural anti-oxidant, several issues and development prospects have been proposed.
