摘要
本文对茶黄色素(Typ)化学成分及其对油脂的抗氧化活性进行了测定。结果表明,茶黄色素含有茶叶中大部分生物活性物质,是一类人体多功能保健食用色素并具有优异抗氧化活性,对油脂抗氧化作用比维生素E、C和二丁基羟基甲苯(BHT)强得多,在食用、油脂工业和药物应用上有美好开发前景。
In this paper, chemical component and antioxidative activities aga-inst lipid tea yellow pigment (TYP) are studied. The results show that theTYP contains vitamin C, vitamin E, tea polyphenols, amino acid, and otherbiologically active substances. TYP is a highly valuable product due toits chemical composition and physiological effect on human body. Anti-oxidativ activity in TYP is higher than in those vitamin E. tea polyp-henols, and butylhydroxy--toluol(BHT) .Technological scheme of TYP man-ufacturing consists of the following processes: water extract obtaining.extract filtration and drying. By using these technological methods, the.econ-omic benefits can be gained significantly.
