老火汤是广东最有特色的饮食文化之一,具有营养保健的功效。文章简单介绍了老火汤的发展历程、技法、营养风味成分在制作过程中的变化,药材和食疗,着重介绍了现代高新技术在老火汤中的应用,对高新技术在老火汤中的应用作了展望,为老火汤的技术研究提供了参考。
Chinese double-stewed soup is one of Guangdonges distinctive food cultures. It is full of nutrition and good for health. Introduce the development process and techniques of Chinese double- stewed soup, change of nutrition flavor ingredients in the production process, medicinal materials and diet therapy briefly, focus on the application of modern high-tech in the old soup, prospect the hightech application in Chinese double-stewed soup and provide references for the technical research of Chinese double-stewed soup.
