冷冻面条作为一种发展前景良好食品,具有营养、健康、安全、快捷等优点。该文从冷冻面条生产工艺、品质改良和生产设备等方面进行论述,并介绍其在发展中存在不足及未来发展趋势。
Frozen noodles are well-developed food. There are several advantages, e.g. health, security, nutrition and fast. This review discussed the production process, quality improvement and production equipment of frozen noodles, and pointed out the shortcomings in the development and the future trends of it.
