响应面法优化王浆蛋白酶解工艺研究 被引量:2

Optimization of Royal Jelly Protein Enzymatic Hydrolysis Technology with Response Surface Method

摘要 采用响应面分析法,优化胃蛋白酶酶解王浆蛋白制备抗氧化肽的工艺条件,以1,1-二苯基-2-苦基苯肼(DPPH)清除率为响应值,研究了酶与底物的比值([E]/[S])、底物浓度以及酶解时间对蜂王浆酶解物抗氧化的影响。结果表明,最终确定出制备抗氧化肽的最优酶解条件为,[E]/[S]2.24%、底物浓度1.61%、酶解时间3.7 h,在该条件下制备的王浆蛋白酶解物的DPPH自由基清除率为47.84%。 In order to optimize enzymolysis technology of antioxidant peptides from royal jelly protein with pepsin,the radical scavenging activity of DPPH were taken as response values to analyze the effect of ratio of enzyme to substrate(),substrate concentration and hydrolysis time on the technology of antioxidant peptides from royal jelly.The result showed that the optimum conditions to achieve the maximum antioxidant ability were as follows: 2.24 %,substrate concentration 1.61 %,enzymolysis time 3.7 h.Under such conditions,DPPH radical scavenging activity of antioxidant peptides reached 47.84 %.
