湖南武陵山区野生阳荷红色素的理化性质研究 被引量:8

摘要 以湖南武陵山区野生阳荷为材料提取花苞红色素,研究pH值、糖类、防腐剂、氧化还原剂以及金属离子对色素稳定性的影响。结果表明:阳荷红色素对pH值较敏感,酸性条件有利于色素稳定;糖类和防腐剂中的山梨酸钾和苯甲酸钠对阳荷红色素的稳定性无不良影响;抗坏血酸有增色效应,体系中添加12%(v/v)以内的H2O2对色素的吸光值无明显影响;Fe3+、Fe2+、Ca2+、Al3+对阳荷红色素影响较大,Mg2+、Al3+、Cu2+次之,具有增色效应,K+、Na+对阳荷红色素没有影响。 The effects of different conditions,such as pH,carbohydrates,preservatives,oxidant,reducer and metallic ions on the stability of red pigment in the wild Zingiber strioatum from Wulin Mountains were discussed.The results showed that the red pigment was sensitive to pH.Acidic conditions are conducive to the pigment stability.The potassium sorbate and the sodium benzoate in carbohydrates and preservatives had no bad effects on the pigment stability.The pigment showed hyperchromicity to the ascorbic acid,there were no significant influences on light absorption value when adding no more 12%(v/v) H2O2 to the system.Fe3+,Fe2+,Ca2+ and Al3+ have the most significant effect on the red pigment of Zingiber strioatum,and the effects of Mg2+,Al3+ and Cu2+ were followed,all of them had hyperchromicity effect.K+ and Na+ had no effect on the red pigment of Zingiber strioatum.
