摘要
小麦籽粒谷蛋白大聚合体 ( GMP)的含量反映了谷蛋白聚合体的粒度分布情况 ,其高低与其他烘烤品质性状有密切的关系。本文对其影响因素进行了研究。结果表明 ,GMP含量受 Glu-1位点等位基因变异、亚基相对含量和环境因素等的影响。其中 ,Glu-A1 b和 Glu-D1 d对 GMP含量有正效应 ,而 Glu-A1 c和 Glu-D1 a对 GMP含量有负效应 ;A组和 C组亚基的相对含量分别与 GMP含量正相关和负相关。GMP含量也受环境因素的影响。在五个试验点中 ,北京和太原点表现为正效应 。
The effects of genetic factors and cultivation conditions on GMP content in common wheat ( T. aestivum L.) were studied in this paper. The results showed that the presence of Glu A1b and Glu D1d , the alleles at Glu 1 gene locus, associated with high GMP content while their allelic variations, Glu A1c and Glu D1a with low GMP content. The relative content of high molecular weight of glutenin subunits (i.e. group A) affected GMP content positively and that of group C of low molecular weight of glutenin subunits negatively. Also, different environments affected GMP content just like protein content and SDS sedimentation value.
