摘要
本文对高压静电场果蔬保鲜机理进行了较为深入的分析,认为果蔬受高压静电场的作用,吸收了场能,改变了果蔬内部的能量分布,导致细胞膜电势发生变化;同时,高压电场电离周围空气产生 03,利用 03杀菌和分解果蔬中产生的乙稀的作用,破坏果蔬的后熟条件;另外,高压静电场的作用降低了苹果中生物酶的活性,使其呼吸代谢活动受到抑制,从而有效的保存水分达到保鲜效果 .
In this paper,We anglyse the mechanism of keeping fruit and vegetables by tht high voltage field of static electricity.When functioned by the field of static electricity,fruit and vegetables can take up the field energy,Which can change the internal energy distribution of fruit and vegetables and can cause the change of electric potencial of the cell membrance.At the same time,arround the high voltage field of static electricity,O 3 is created which can kill the bacteria and can cause the creation of ethylene that can destroy the maturating condition in fruit and vegelable.In addition,the high voltage field of static electricity can reduce the activity of biological enzyme and the activity of breath metabolism,and therefore the moisture content can be preserved.So,in this way,fruit and vegetables can keep fresh efficiently.
