苹果是一种富含多种维生素的水果 ,能够提供人体必要的热量和纤维素 ,其产量也居各种水果之首 ,贮藏方法众多。如何能做到苹果的周年供应 ,现已列入了我国农、牧、商业和机械部的开发课题中。本文主要论述苹果采后的生理特点、化学药剂处理和冷却贮藏的几种方法。
