摘要
以大豆分离蛋白(SPI)、β-环糊精和可溶性淀粉为壁材,采用喷雾干燥法制备红花籽油微胶囊,对红花籽油微胶囊在不同贮藏温度和湿度条件下释放性能进行研究,并引入Avrami's公式对微胶囊芯材红花籽油释放进行分析。结果表明,在贮藏过程中,贮藏温度和湿度越高,芯材红花籽油释放速率越快,保留率越低。
The microencapsulation of safflower oil was prepared by spray drying, using isolated soy protein ( SPI ), 13-cyclodextrin and soluble starch as capsule materials, in addition, the retention ratio of microencapsulated safflower oil was measured at different relative humidity and different storage temperature, the Avrami's equation was used to providing kinetic parameters such as release mechanism parameter and release rate constant. Results showed that: in the process of storage, the release rate rised with the increasing of the storage temperature and humidity.
