摘要
对婴儿配方乳粉在加工、冲调过程中氧化型维生素C(DHAA)、还原型维生素C(AA)及总量维生素C(AA+DHAA,以VC表示)的热降解动力学进行研究。结果表明:加工模拟体系中,AA及VC符合动力学一级反应,活化能分别为46.49 kJ/mol和39.69 kJ/mol。冲调模拟过程中,温度对AA和VC的降解符合零级反应模型,对DHAA的降解符合一级反应模型,反应活化能分别为16.71,19.50,12.04 kJ/mol。
The thermal degradation kinetics of ascorbic acid(AA) , dehydroascorbic acid(DHAA) and vitamin C were determined in infant for- mula milk powder during model processing and preparing.The results show that a first order model can describe well the AA and Vc degrada- tion data,with an activation energy of 46.49 kJ/mol,39.69 kJ/mol during the model processing.The degradation of AA and Vc during prepar- ing follow a zero order kinetic model,and DHAA degradation fit to a first order kinetic model,the activation energy are 16.71 kJ/mol,19.50 kJ/mol, 12.04 kJ/mol, respectively.
