小麦阿拉伯木聚糖及其功能性质研究进展 被引量:10

RESEARCH PROGRESS ON WHEAT ARABINOXLANS AND ITS FUNCTIONAL PROPERTIES

摘要 小麦阿拉伯木聚糖主要存在于小麦细胞壁中,是小麦细胞壁的主要聚合物,其含量、结构以及理化性质对小麦品质、营养特性以及最终利用价值都有重要影响.综述了近年来关于小麦阿拉伯木聚糖结构、理化性质、提取及检测方法等相关研究,并对其功能性质进行了较为深入地介绍,对小麦阿拉伯木聚糖对馒头品质影响的研究潜力和方向进行了展望. Wheat arabinoxylans mainly exist in wheat grain cell walls and are the major polymers in wheat grain cell wall. The content, structure and physiochemical properties of arabinoxylans affect the quality, nutritional property and utilization value of wheat. In this paper, we summarized related studies of structure, physiochemical properties, extraction and detection method of wheat arabinoxylans, and deeply introduced its functional properties, and prospected the study potential and direction of the effects of wheat arabinoxylans on the Mantou quality.
