牛奶中汞的风险分析

摘要 随着工业的发展,空气、水和土壤中汞的含量大幅增加,加大了食品中汞污染的隐患。奶牛摄入、饮用高汞含量的饲料和水都会代谢到乳中。因此,消费者对牛奶中汞的危害要给予高度关注。作者就牛奶中汞的存在形式、来源、危害、监管等方面进行阐述,以期增加消费者对牛奶中汞的科学认识。 The contamination of mercury in air,water and soil is increasing with the development of industry.It also induces the risk of mercury in food through food chain.Mercury is found in milk after dairy cow consume feed and water contented high level of mercury.The mercury in milk is paying attention by our consumers.In the present paper,occurrence form,source,harm and surveillance of mercury in milk were reviewed in order to make consumers know more knowledge on mercury in milk.
