摘要
张杂谷红曲米是红曲霉接种于小米发酵而得。该实验研究固体发酵制备张杂谷红曲米工艺条件,通过正交实验得到最佳发酵工艺条件为:150 ml三角瓶中,30℃下进行恒温培养,发酵时间为14天、中间加水量为8%(接种72 h后每24 h加一次水并摇瓶)、接种量10%、底物量为15 g,所得红曲米色价为2 618 u/g。
Millet red rice is fermented from millet by Monascu. The preparation conditions of hybrid millet red rice by solid-state fermentation are studied by orthogonal experiments. Optimum conditions were gained as folloes: triangular flask 150 ml, fermentation temperature 30 ℃, fermentation time 14 d, quantity of the middle of imbitition 8%, the first time of imbitition 72 h, inoculum size 10% and the amount of substrate 15g.
