摘要
抗性淀粉及其减肥功能是近年碳水化合物和健康领域两个研究热点。文章综述抗性淀粉的减肥机制及其在国内外防治肥胖方面的研究进展,通过总结已有文献,分析抗性淀粉影响餐后饱腹感、血脂水平的变化情况,并分别介绍产生该类影响的机制,揭示抗性淀粉具有有效预防控制肥胖症的功效,为抗性淀粉的应用和健康减肥提供理论依据并丰富该领域的资料库。
Resistant starch （RS） and its weight-loss function are two research hotspots of carbohydrate and health field in recent years. The paper reviews the research progress in the prevention of resistant Starch on obesity abroad and internal, tries to analyze how resistant starch affect postprandial satiety and blood-fat, introduces the mech- anism of these affections, reveals resistant starch has functions to prevent obesity, provides the theoretical foundation to resistant starch application, weight-loss in good health and enriches the data- base of this field.
