摘要
色差仪能够准确测量出颜色的差异,目前已经广泛用于肉类的研究领域。在使用色差仪测定肉色过程中存在着许多影响测量精度的因素,主要集中在光源、最佳观测时间、视场角度以及操作误差等方面,导致实验的数据变异较大,降低了不同研究结果之间的可比性。对这几类问题分别进行了阐述,并提出相关建议。
The colorimeter can measure the difference of meat color accurately and has been widely used in meat research area. There are many factors affecting the measurement accuracy, which mainly focus on the illuminants, optimum observation time, observation angle, and procedural error, leading a large variation of the results which could decrease the comparability between different research results. The factors mentioned above were described in this article, and some recommendations were proposed.
