摘要
目的:研究蜜胺仿瓷餐具中甲醛和三聚氰胺在食品模拟物中的迁移规律。方法:采用乙酰丙酮分光光度法和高效液相色谱法测定蜜胺仿瓷餐具在不同食品的食品模拟物中,不同使用条件下甲醛和三聚氰胺的迁移量,分析迁移量数据得出迁移规律。结果:蜜胺仿瓷餐具中甲醛和三聚氰胺,在相同使用时间和温度下,酸性食品模拟物迁移量最大;在同种食品模拟物中甲醛和三聚氰胺的迁移量均随接触温度的升高和时间的延长而增加,且高温下迁移量较大;甲醛和三聚氰胺迁移量随使用次数的增加而递减,但表面磨损后又迅速增大;微波使用条件下甲醛和三聚氰胺迁移量比常规使用条件下大,且表面易破损。结论:蜜胺仿瓷餐具在常规餐饮条件下使用是安全的,但不宜在高温和微波条件下使用,同时不宜作为食品储存容器长期接触食品。
Objective:To study the migration rules of melamine kitchenware's formaldehyde and melamine in food simulants.Methods:Migration amounts of melamine kitchenware's formaldehyde and melamine in different food simulants under different conditions were determined by acetylacetone spectrophotometric method and high performance liquid chromatography respectively,then the migration rules were obtained through data analysis.Results:At the same time and same temperature,melamine kitchenware's formaldehyde and melamine performed the largest migration in acid food simulants.In the same food stimulant,the formaldehyde and melamine migration increased with the contact temperature and time,and both of them migrated much more at high temperature;The formaldehyde and melamine migration decreased with using,but increased rapidly when the melamine kitchenware's surface appeared abrasion;The formaldehyde and melamine migration in microwave condition had more migration amount than normal condition.Conclusion:Melamine kitchenware are safe in conventional dining using,but they can't be used in microwave and at high temperature,and can't be used as containers to store foodstuffs for long time.
