摘要
研究不同氮肥施用量对粳米的产量、碾磨品质、外观品质和营养品质的影响。结果表明:在高氮(180kg/hm2)处理下,沈农315产量较高,为9.78t/hm2。随着施氮量的增加,糙米率、精米率、整精米率均呈上升趋势,对粳米的碾磨品质有所改善;氮肥施用量对粳米的垩白率和垩白度影响较为明显,使粳米的外观品质变差;施氮量的增加,蛋白质含量也显著增加,脂肪酸含量和综合值却下降,影响了粳米的营养品质。在大米食味感观测定中沈农315无论是在米饭粘性、弹性、外观、香味的总分比沈稻7号和沈稻11都要好,其次是沈稻11,而沈稻7号在回生特性测定方面比较突出。
The effects of different application rate of nitrogen fertilizer on rice yields,milling quality,appearance and nutritional quality was studied in this research.The results showed that in the high nitrogen treatment,Shennong 315 yielded at a higher rate of 9.78t/hm 2.With the increasing of nitrogen fertilizer,brown rice rate,head rice rate and the whole rice rate showed an upward trend,the quality of rice milling was improved.The application rate of nitrogen fertilizer had a distinct influence on rice chalkiness rate and chalkiness degree.It influenced the quality of the rice appearance.With an increasing of nitrogen amount,rice protein content increased significantly,but fatty acid content and taste value declined,therefore affected the rice nutritional quality.In terms of rice taste,Shennong 315 had a superior level of viscocity,elasticity,appearance and aroma than that of Shendao 7 and Shendao 11,followed by Shendao 11.Shendao 7 acted better in retrogradation properties determination.
